Strawberry Ice Cream

I love strawberries. I remember how sweet they were when I was a child. However, because of soil depletion, pesticides and bioengineering they just aren’t as sweet anymore. Make sure to buy organically and in-season to get the best tasting strawberries. I have tweaked this recipe from one I found online to better suit my nutrition needs. I love healthy treats. I hope you will too! Good 2 eat, good 4 us from our head 2 our feet!
  • 1 cups almonds, soaked
  • 1/2 cups chia seeds
  • 1 cups pure water
  • 3 cups organic ripe strawberries, washed and hulled
  • 1 T coconut oil
  • 1/2 cups dates and water mixture, blended (soak 4-6 dates in water and blend)
  • 1 inch vanilla bean seeds, or 1 tsp vanilla extract
  • 1/2 tsp Himalayan sea salt
  1. Soak almonds and dates.
  2. Blend almonds, chia and water in a blender until creamy (use a cheese cloth to strain out the big chunks).
  3. Combine with berries, vanilla and dates.
  4. If possible, use an ice cream maker or food processor.
  5. If you are using a food processor, pulse and scrape the side to ensure an even texture.
  6. Cover directly with plastic wrap and place in the freezer.
  7. Before serving, scoop the mixture back into the food processor or blender and blend until it is creamy.
  8. Serve and enjoy.
  9. You can also add raw cacao chips if that is your sort of thing!
