This luxurious, rich and nutrient dense dessert will amaze your taste buds with passionate pleasure.
  • Crust
  • 2 C pecans
  • 2 C raw almonds
  • 1 C dates Pitted
  • 3 Tablespoons water
  • 1/2 C coconut oil
  • Filling
  • 3 C raw cashews
  • 3 C raw almonds
  • 1 C fresh squeezed lemon juice
  • 1/2 C raw honey
  • 3/4 C coconut oil
  • 10 oz organic frozen raspberries
  • 1/2 teaspoon pink Himalayan sea salt

  2. Prep by soaking the cashews and dates in pure water. (The longer you soak them the creamier the texture will be.
  3. Combine the crust’s raw nuts, coconut oil and dates in the food processor and pulse until large crumbs.   4. Gently sprinkle the water over it and blend a few more pulses.
  5. In pan sprinkle coconut flakes to cover bottom and to keep the crust from sticking.
  6. Add the nut/date mixture and pack down by pressing down on it with a measuring cup.
  7. In food processor add the soaked filling nuts and lemon juice and oil blend until smooth.
  8. Add the rest of the filling ingredients and blend until desired smoothness is acquired.
  9. Pour over crust and smooth flat.
  10. Place in fridge covered for at least eight hours.
  11. Serve when firm and solid
