Raw Pumpkin Pie with Dream Whip

Raw Pumpkin Pie with Dream Whip

I wish I could say I came up with this recipe on my own! I actually combined a few recipes from Gabrielle Chavez (The Raw Food Gourmet) and Poemomm, who is a contributor to the Gone Raw website.
  • [b]RAW CRUST[/b][br]
  • 3 C raw almonds, cashews, walnuts or any other kind of nut you desire
  • 1 ½ C raisins and or pitted dates
  • ½ C soft coconut oil
  • [b]THE FILLING[/b]
  • 2 C raw cashews
  • 1 C pure water
  • ½ C pure raw maple syrup
  • ½ t Himalayan sea salt
  • ½ t ground ginger
  • ½ t ground cloves
  • 1 t ground cinnamon
  • 2 C organic baby carrots
  • 3 T coconut oil (helps firm)[br]
  • [b]DREAM WHIP[/b]
  • 1 ½ C raw cashews
  • ½ C pine nuts
  • Juice of 1 organic orange
  • Juice of 1 organic lemon
  • 1 t organic vanilla
  • ¼ C raw honey
  • Dash Himalayan sea salt
  1. [/b]For a crunchy crust, soak nuts for at least 1 hour. For a softer crust (more like pastry), soak nuts for 4 hours
  2. Chop nuts in food processor by pulsing until you get pieces the size you want. Smaller pieces will be more like a pastry. Larger pieces will be more like a graham cracker.
  3. Soak raisins or dates and then process together with a little dash of salt.
  4. Add coconut oil and raisin-date mixture and stir by hand
  5. Use a spoon to press into a 9 inch slip form pan to form the crust
  6. Place in the refrigerator
[br][br][b]THE FILLING[/b]
  1. Soak cashews for at least 4 hours so they are soft
  2. In the food processor combine cashews, water, maple syrup, salt and spices until really smooth
  3. Set the bowl aside
  4. In food processor puree baby carrots until they are very smooth. (5 – 10 minutes)
  5. Add the nut mixture back into carrot puree and add coconut oil
  6. Blend until well mixed
  7. Pour into our nut pie shell and refrigerate at least 1 hour or until firm
  8. Remove from refrigerator when set and serve with our dream whip on top
[br][br][b]DREAM WHIP[/b]
  1. Soak cashews at least 2-3 hours
  2. Soak pine nuts at least 2-3 hours
  3. Blend in blender or food processor until creamy
  4. Serve a dab on top of the raw pie and enjoy
