Brown Rice and Fresh Veggies

  • 2 cups water
  • ¼ tsp salt
  • 1 cups brown rice washed thoroughly
  • 1 cups fresh grapes, cut in halves, or pears, chopped
  • ½ cups red pepper, chopped and asparagus
  • 2 celery ribs, chopped
  • ½ cups cucumber, chopped
  • ¼ cups red onions, chopped finely
  • 1 T chives, chopped
  • 1 T toasted sesame oil
  • 3 T lemon juice
  • 2 T Bragg’s amino acid
  1. Add brown rice and salt to water.
  2. Bring to a boil then reduce the heat and cover the pot.
  3. Simmer for 40–45 minutes.
  4. Set aside and allow to cool at room temperature.
  5. In a separate bowl, combine fruit, vegetables, oil, lemon juice and Braggs.
  6. Stir into brown rice and serve.
