Summary I found this recipe six years ago while browsing the internet. Since then I have done a few revisions and changed a few ingredients. I like to call them Abundant Almond Nut Bars because the nutrition in them is so abundant that you almost forget it is a desert. I love these healthy treats. I hope you will too!
  • 2 cup raw almonds, soaked (4 hours) in purified water
  • 1/2 cup chia seeds
  • 1/2 cup dried shredded organic unsweetened coconut flakes
  • 1/2 cup raw organic almond butter
  • 1/2 cup coconut oil
  • 2 T raw honey
  • 1 T vanilla
  • 1/2 tsp Himalayan sea salt (This is the purest salt out there and is delicious!)
  1. Soak raw almonds for 4 hours in purified water.
  2. Combine the soaked nuts, chia seeds, almond butter and salt in the food processor.
  3. Pulse briefly for about 10 seconds.
  4. Combine vanilla, honey and ½ cup coconut oil (Make sure oils are warm by soaking in a hot water bath so it is runny or creamy, nor hard. Do not cook!)
  5. Add to the nut mixture in the processor and pulse until it is a chunky paste
  6. Press mixture into a glass dish 8X8 and chill in refrigerator for at least 1 hour. Sometimes when I am feeling naughty, I press rows of little organic chocolate chips into the top. This adds a little kick and truly makes this dish a desert.
  7. Remove from refrigerator, cut bars to serve.
  8. Store in refrigerator to keep the bars solid. ENJOY!
