Summary I found this recipe six years ago while browsing the internet. Since then I have done a few revisions and changed a few ingredients. I like to call them Abundant Almond Nut Bars because the nutrition in them is so abundant that you almost forget it is a desert. I love these healthy treats. I hope you will too!
2 cup raw almonds, soaked (4 hours) in purified water
1/2 cup chia seeds
1/2 cup dried shredded organic unsweetened coconut flakes
1/2 cup raw organic almond butter
1/2 cup coconut oil
2 T raw honey
1 T vanilla
1/2 tsp Himalayan sea salt (This is the purest salt out there and is delicious!)
Soak raw almonds for 4 hours in purified water.
Combine the soaked nuts, chia seeds, almond butter and salt in the food processor.
Pulse briefly for about 10 seconds.
Combine vanilla, honey and ½ cup coconut oil (Make sure oils are warm by soaking in a hot water bath so it is runny or creamy, nor hard. Do not cook!)
Add to the nut mixture in the processor and pulse until it is a chunky paste
Press mixture into a glass dish 8X8 and chill in refrigerator for at least 1 hour. Sometimes when I am feeling naughty, I press rows of little organic chocolate chips into the top. This adds a little kick and truly makes this dish a desert.
Remove from refrigerator, cut bars to serve.
Store in refrigerator to keep the bars solid. ENJOY!
