Ingredients
  • [b]PECAN CRUST[/b]
  • 1 C pecans
  • 1 C medjool dates
  • ½ t vanilla powder
  • ½ -1 t water
  • [b]FILLING[/b]
  • 1 C coconut meat
  • ¾ C cashews soaked 3 hours
  • ½ C honey
  • 2/3 C coconut butter
  • 4 large medjool dates, soaked
  • 1 ½ C of carrot juice
  • ½ t vanilla powder
  • 1 t ginger powder
  • ½ t nutmeg
  • 2 t cinnamon
  • ½ Himalayan salt
  • Pinch of cloves
Instructions
[b]PECAN CRUST[/b]
  1. Put pecans in food processor. Process until pecans are in small pieces (not like powder or butter).
  2. Add dates and vanilla and mix.
  3. Add a little water at a time until the crust forms a ball in the food processor.
  4. Pat into pie tin.
  5. Refrigerate until set up.
[br][br][b]FILLING
  1. [/b]Add ingredients and blend on high for 90 seconds.
  2. Pour into pie crust.
Notes
Note: Make your pie crust ahead of time so the crust can be set up well before adding the filling
