Peppermint Ice Cream

I love peppermint and I found this recipe a few years ago. Since then I have enjoyed this cool refreshing treat quite a few times and I have tweaked it a little to suit my nutrition needs. I love healthy treats. I hope you will too!
Ingredients
  • 1 1/2 cup almond milk (look for my recipe)
  • 2 T raw honey
  • 3 dates
  • 1 T raw cashews, soaked
  • 1 T coconut oil
  • 1 tsp organic peppermint extract
  • 1/2 tsp Himalayan sea salt
Instructions
  1. Soak the cashews.
  2. Blend everything in blender until it is creamy.
  3. Freeze until solid.
  4. If possible, use an ice cream maker or food processor.
  5. If you are using a food processor, pulse and scrape the side to ensure an even texture.
  6. Put in freezer until it becomes solid. Cover directly with plastic wrap.
  7. Before serving scoop the mixture back into the food processor or blender and blend until creamy.
  8. Serve and enjoy.

    • Hi Starr, Glad you love these healthy treats as much as we do. Recommended time to soak cashews is 1-4 hours. The longer you soak the cashews the smoother their consistency will be. You should be able to buy quality organic extracts at your local organic grocer. You can also buy extracts online but be sure to do your homework and make sure they are pure and used from organic and quality product. Enjoy! Let Wellness Begin, KDawn
