I love peppermint and I found this recipe a few years ago. Since then I have enjoyed this cool refreshing treat quite a few times and I have tweaked it a little to suit my nutrition needs. I love healthy treats. I hope you will too!
1 1/2 cup almond milk (look for my recipe)
2 T raw honey
1 T raw cashews, soaked
1 T coconut oil
1 tsp organic peppermint extract
1/2 tsp Himalayan sea salt
Soak the cashews.
Blend everything in blender until it is creamy.
Freeze until solid.
If possible, use an ice cream maker or food processor.
If you are using a food processor, pulse and scrape the side to ensure an even texture.
Put in freezer until it becomes solid. Cover directly with plastic wrap.
Before serving scoop the mixture back into the food processor or blender and blend until creamy.
