Barley Salad

Ingredients
  • 1 quart barley
  • 3 avocados, diced
  • 3 tomatoes, diced
  • ½ cucumber
  • ½ zucchini
  • ½ bunch green onions, chopped
  • 2 T parsley, chopped
  • 1 T cayenne
  • 2 tsp kelp
  • 1 T tomato powder
  • 4 garlic cloves, finely chopped
  • ½ inch fresh ginger, finely chopped
  • 1 medium red pepper, chopped
  • 2 T mint, finely chopped
Instructions
  1. Add water to barley with enough to cover.
  2. Sprout overnight.
  3. Blend ginger with cucumber and zucchini into smooth a liquid.
  4. Toss all ingredients together.
